Double Chocolate Baked Oats

Ingredients:

½ banana
2 tbsp yogurt
1 egg
1 tbsp nut butter (or substitute with more yogurt/banana)
½ tsp baking powder
2 tbsp cocoa powder
5 tbsp (about ⅓ cup) oat flour (or ½ cup rolled oats, use a blender)
¼ cup chocolate chips or chunks

Directions:

1) Preheat your oven to 400°F.

2) If using a blender, add all ingredients (except the chocolate chips) to a blender and blend until smooth. Then skip to step 4. If not, in a small bowl, mash the banana with a fork and add the yogurt. Then add the egg and nut butter, and mix to combine.

3) Add the baking powder, cocoa powder, and oat flour. Mix to combine.

4) Add in the chocolate chips, saving a few pieces for the top. Mix to distribute, and transfer to a small pyrex or baking dish.

5) Bake at 400°F for 25 minutes, let cool, and enjoy! Serve with yogurt, berries, or just by itself!
