1 cup oat flour
2 1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
2 tsp cinnamon
1 banana
2 eggs
1/2 cup yogurt
2 1/2 tsp maple syrup
1 tsp vanilla
1/2 granny smith apple, grated
1) To a large bowl, add the banana and mash with a fork. Then, add the eggs, yogurt, maple syrup, and vanilla. Whisk to combine.
2) In a small bowl, add the oat flour, baking powder, baking soda, salt, and cinnamon. Whisk to combine.
Add the dry ingredients to the wet ingredients and fold together, just until combined.
3) Peel and grate your apple, then stir in.
4) Preheat a pan over medium heat and add butter or oil (to prevent sticking). Pour the pancake mixture to form your desired size and shape, and let cook for 4-6 minutes per side (depending on size). Flip the pancakes a minute or so after bubbles have formed on the top.
5) When done, place the pancakes on a baking rack to cool or on a plate to enjoy right away. Serve with berries, syrup, yogurt, or just by themselves, and enjoy!
6) To store in the fridge, place in an airtight container for up to 5 days. To store in the freezer, place in a bag or container and freeze for up to 3 months (to avoid becoming freezer-burned).
