Pumpkin Spice Baked Oats

Ingredients:

1/4 banana
2 tbsp yogurt
2 tbsp pumpkin puree
1 egg
1 tbsp nut butter (or substitute with more yogurt/banana)
1/2 tsp baking powder
1/4 tsp ground cinnamon
1/8 tsp ground cloves
1/8 tsp ground ginger
1/8 tsp ground nutmeg
5 tbsp (about 1/3 cup) oat flour (or 1/2 cup rolled oats, use a blender)
Optional: 5-7 pecans, chopped

Directions:

1) Preheat your oven to 400°F.

2) If using a blender, add all ingredients (except the pecans) to a blender and blend until smooth. Then skip to step 4. If not, in a small bowl, mash the banana with a fork and add the yogurt and pumpkin. Then add the egg and nut butter, and mix to combine.

3) Add the baking powder, spices, and oat flour. Mix to combine.

4) Add in the chopped pecans, saving a few pieces for the top. Mix to distribute, and transfer to a small pyrex or baking dish.

5) Bake at 400°F for 25 minutes, let cool, and enjoy! Serve with yogurt, berries, or just by itself!
